Uber Crunchy Pork Crackle

What you’ll need

1 Pork Roast rind on

¼ cup salt

2 Tbsp. oil

How to make it

  1. Remove pork roast from packaging and place in a deep baking dish.

TIP: If your pork roast is not pre-scored, lightly cut the rind with a sharp knife, ensuring you do NOT cut through the rind and into the meat.

  1. Pour 2L of boiling hot water over the rind – this helps to open the pores and score marks of the rind.
  2. Remove roast from baking dish and pat dry completely. Place in fridge uncovered, overnight.

The secret to good crackling is really dry rind – so the longer it can stay in the fridge uncovered to dry out, the better!

  1. Preheat oven to 220 degrees Celsius (fan forced).
  2. Rub oil and half of the salt into the rind. Sprinkle the rest of the salt on the top of the rind (do not rub in).
  3. Place in deep baking tray and into the oven for 40 mins at 220 degrees Celsius. Reduce oven temp to 180 degrees Celsius and bake for 40 mins per kg or until cooked through.
  4. Allow to rest for 10 mins.
  5. Brush off excess salt from the rind and serve.
