1 tsp. olive oil
½ onion, diced
4 garlic cloves, minced
200g beef mince
½ green capsicum, thinly sliced
½ red capsicum, thinly sliced
3 Tbsp. tomato paste
1 red chili, minced
2 tsp. smoked paprika
2 tsp. ground cumin
2 tsp. salt
1 tsp. black pepper
½ cup Cheddar cheese, grated
Parsley, to serve

How to make it

  1. Preheat oven to 180°C.
  2. Heat oil in a fry-pan over med-high heat. Sauté onion and garlic for 2 mins.
  3. Add pork and beef mince and brown. Stir in capsicum, tomato paste, chili, paprika, cumin, salt and pepper.
  4. Cook for 2 mins or until combined.
  5. Roll out pizza dough into large rectangle. Place on lined baking tray.
  6. Using a spoon, gently spread mince mixture over dough, leaving 5cm of dough on all sides empty.
  7. Seal the top and bottom edges by pinching the dough together. Fold sides of dough over the mixture to form a ‘bowl’ shape; trapping the mixture inside.
  8. Sprinkle with cheese and place in oven for 30 mins or until dough is cooked.
  9. Remove from oven, sprinkle with parsley and squeeze with fresh lemon. Serve immediately.
