Raspberry Pork Medallions

Our pork medallions with raspberry sauce come together in no time and are perfect for an easy midweek meal.

What you’ll need

4 pork loin steaks

1 Tbsp. oil

2 Tbsp. soy sauce

1 garlic clove, minced

1/2 tsp. ground ginger

1 cup fresh raspberries

2 Tbsp. raspberry jam

2 tsp. fresh basil, minced

½ tsp. fresh mint, minced

How to make it

  1. Using a meat mallet, flatten each loin steak to 1 cm thickness. Heat frypan over med heat, ad oil and cook pork for 3 mins each side of until cooked through.
  2. Remove pork and set aside. Add soy sauce, garlic and ginger to the pan and stir to combine. Add raspberries, jam, basil and mint.
  3. Cook for 2-3 mins or until slightly thickened.
  4. Drizzle over pork and serve.
