Pork Meatballs with Ginger Noodle Soup

Warm up this winter with this flavoursome Asian dish!

What you’ll need

100 g pork mince

¼ tsp. white pepper

¼ tsp. sugar

¼ tsp. vegetable stock powder

1 French shallot , diced

1 spring onion , thinly sliced

5 cm piece of ginger, minced

1 Tbsp. vegetable stock 

3 tsp. fish sauce

2 packets of instant ramen noodles

1 spring onion, thinly sliced

6 sprigs of fresh coriander, chopped

1 fresh red chilli, thinly sliced

How to make it

  1. Place spring onions and shallots in a mixing bowl. Add mince, white pepper, sugar, stock powder and combine. Roll into small balls and set aside.
  2. Fill a large saucepan with 1L of water and set over a medium-high heat. Add ginger, stock cube, fish sauce, salt and pepper. Bring to boil and add meatballs. Cook for 2 mins
  3. Drop in the noodles and cook for a further 2 mins.
  4. Divide the soup between bowls, scatter coriander and chilli then serve immediately.
