Pork Loin Fillet with Chimichurri

What you’ll need

  • 350g SunPork Whole Pork Loin
  • 1 bunch flat leaf parsley
  • 8 garlic cloves, minced
  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 1 lemon wedge
  • 1 Tbsp. diced red onion
  • 1 tsp. dried oregano
  • 1 tsp. black pepper
  • ½ tsp. salt

How to make it

  • Pre-heat fan forced oven to 180°C.
  • Pulse parsley, garlic, onion, and oregano in a food processor to chop.
  • Add remaining sauce ingredients and blend.
  • Place the SunPork Whole Pork Loin into a lined baking tray and cover with half the sauce.
  • Roast for 30 mins or until cooked through.
  • Rest, covered loosely with foil for 5 mins.
  • Slice thickly and place on a serving plate.
  • Drizzle with remaining sauce and serve with freshly steamed green beans and cherry tomatoes.
