Honey, Lemon & Ginger Pork Stirfry

What you’ll need

500g SunPork pork stir-fry strips

1 garlic clove, crushed

3cm piece ginger, finely grated

2 Tbsp. vegetable oil

1 lemon, juiced

2 Tbsp. honey

2 Tbsp. soy sauce

2 Tbsp. Chinese rice wine

3 tsp. cornflour

2 bunches broccolini, trimmed, halved

Tin of baby corn spears

steamed white rice, to serve

How to make it

1.        Combine pork, garlic and ginger in a large bowl.

2.        Heat wok over high heat until hot and add half the oil and swirl to coat.

3.       Add half the pork and stir-fry for 2 to 3 mins or until browned.

4.       Remove from pan and set aside, then repeat with oil and remaining pork.

5.       Combine 2 Tbsp. of lemon juice, honey, soy sauce and rice wine in a jug.

6.       Place cornflour in a small bowl and slowly add sauce mixture and stir until smooth.

7.       Return pork to wok and add broccolini and corn spears, stir-frying for 2 mins.

8.       Stir in cornflour mixture and bring to the boil.

9.       Stir-fry for 2 to 3 mins or until pork and broccolini are cooked through and sauce thickens.

10.   Serve with steamed white rice.
