Green Eggs and Ham

What you’ll need

·         Leftover Leg or Shoulder Ham

·         6 eggs

·         2 Tbsp. Thickened cream

·         2-3 Tbsp. Basil Pesto

·         30g butter

·         2 English Muffins

·         2 Tbsp. Onion relish

 

 

How to make it

1.       Toast English muffins as per packet instructions

2.       Whisk eggs, cream and pesto together. Place a medium frypan on medium heat, melt butter and pour in egg mixture.

3.       Scramble the eggs by continuously stirring the mixture in the pan for 1-2 mins or until just cooked.

4.       Layer the ham on top of the muffin, followed by the eggs. Top with onion jam and enjoy!
