Garlic & Lemon Pork Skewers with Caprese Salad

On the table in 10 mins, these garlic and lemon pork skewers are full of flavour and served with a caprese salad for a healthy dinner!

What you’ll need

 

4 pork loin steaks halved lengthwise

140g Greek Yoghurt

2 cloves garlic minced

2 Tbsp. basil finely chopped

1 Tbsp. parsley finely chopped

1 lemon zested

Grilled pita bread to serve

2 Tbsp. red wine vinegar

2 tsp. caster sugar

1/4 cup olive oil

4 tomatoes cut into wedges

1 red onion thinly sliced

1 cup basil leaves

180g bocconcini, drained, torn

 

How to make it

  1. Place pork, yoghurt, garlic, basil, parsley, lemon zest and oil in a large bowl and combine.
  2. Thread pork lengthwise onto skewers. Lightly grease a chargrill pan or barbecue, then preheat to high.
  3. Cook skewers for 5 minutes or until cooked through.
  4. Meanwhile whisk vinegar, sugar and oil in a large bowl until combined. Add tomatoes, onion, basil and bocconcini, and toss to combine.
  5. Divide skewers and salad among plates. Serve
