Bacon and Cheese Loaded Cob Loaf

What you’ll need

200g Bacon
1 large cob loaf
2 Tbsp. chives, chopped
250g cream cheese softened
2/3 cup cream
2/3 sour cream
1 ½ cup grated cheese
1 packet French onion soup mix
Salt & pepper, to taste
4 bread rolls, diced

How to make it

  1. Preheat oven to 180°C.
  2. Cut the top off the cob loaf and scoop out the bread from the centre, leaving a 1.5cm edge. Chop up bread centre and set aside.
  3. Cook bacon in a fry-pan over med. heat. Cook for 5 mins or until crispy.
  4. In a bowl, combine bacon, chives, cream cheese, cream, sour cream, grated cheese and French onion soup mix. Season with salt and pepper.
  5. Spoon mixture into the centre of the loaf. Arrange centre bread bits and diced bread rolls around the outside of the cob loaf on a lined baking tray.
  6. Place in oven for 20 mins or until lightly toasted.
  7. Remove from oven, sprinkle with chives and serve immediately.
