Memphis pork roast with loaded ranch potato salad

What you'll need:

How to make it:

  1. Cooked SunPork American BBQ Pork Roast as per cooking instructions.
  2. Place potatoes in a large pot and cover with water. 
  3. Bring to the boil over high heat and simmer for 15 mins or until tender. 
  4. In a bowl, combine sour cream, mayonnaise and ranch dressing. 
  5. Add potatoes, cheddar cheese and eschallots and stir well. 
  6. Cook bacon in a fry pan over med-high heat until crispy.
  7. Sprinkle bacon on top and refrigerate until chilled. 
  8. Serve potato salad with American BBQ roast and enjoy!
