Vietnamese Pork and Noodle Soup

What you’ll need

1 packet Three Aussie Farmers Pulled Pork

1 packet Hokkien noodles

1 Tbsp. Peanut Oil

6 Spring Onions, thinly sliced

1 Tsp. Fresh ginger

1 Tsp. Garlic, minced

2 tomatoes, chopped

2 Tbsp. Fish sauce

1 tsp. salt

2 cups water

500ml chicken stock

2 cups bean sprouts

2 Tbsp. lime juice

1 cucumber

1 cup of mixed mint, basil & coriander

 

How to make it

1.       Heat oil in large saucepan over medium heat. Add spring onions, ginger and garlic and cook for 2 mins.

2.       Add tomatoes, fish sauce, salt, water and chicken stock. Bring to the boil. Reduce to a simmer and add noodles. Allow to simmer for 5 mins

3.        Add lime juice, bean sprouts, cucumber, herbs and pulled pork.

4.       Serve immediately and enjoy!
