Traditional Italian Bolognese

Did you know that authentic Bolognese is made using pork mince?

What you’ll need

  • 500g Pork Mince
  • 500g Veal Mince
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 Brown Onions, Diced
  • 2 Celery Sticks, Diced
  • 5 garlic cloves, minced
  • 200ml Red wine
  • 1 L tomato Passata
  • 400ml Beef Stock
  • 2 Bay leaves
  • 1 Star anise
  • 2 sprigs thyme
  • 1 packet pappardelle pasta
  • 1 Tbsp. Balsamic Vinegar
  • 2 cups fresh basil leaves, torn
  • Parmesan to serve

How to make it

 

1.       Heat oil in large saucepan over high heat. Add onion, celery and garlic and cook until softened.

2.       Add veal and pork and cook until browned. Add the wine and simmer for 3 mins.

3.       Add the passata, stock, bay leaves, star anise and thyme. Simmer for 2 hours, stirring occasionally.

4.       Meanwhile, cook the pasta according to packet instructions.

5.       Stir the vinegar and basil into the sauce. Serve with pasta and sprinkle with parmesan.
