Spiced Quince Glazed Shoulder Ham

Take our beautiful Shoulder Ham to the next level by glazing it with this delicious spiced quince glaze. Salty ham and sweet glaze equals a match in heaven!

What you’ll need

 Three Aussie Farmers Shoulder Ham
 100g quince paste
 60ml dry white wine 
 2 Tbsp. apple juice
 1 Tbsp. Sherry vinegar
 ½ tsp ground cloves
 ½ tsp ground cinnamon and
 ½ tsp ground allspice
 160g brown sugar

 

How to make it

  1. Heat oven to 180C.
  2. To make the glaze, mix all ingredients together (except brown sugar).
  3. Heat in a saucepan over medium-high heat until melted and smooth.
  4. Add brown sugar and stir until dissolved.
  5. Remove the skin from the ham, being careful not to tear the fat.
  6. Score the fat (not the flesh) evenly in a diamond pattern, ensuring an even scoring depth as you go. 
  7. Glaze the ham then place in a large roasting pan with 1 cup of water.
  8. Bake until sticky and golden approx 1 hr.
  9. Baste the ham with glaze while cooking.
  10. Rest for 30 mins before carving.
