Slow Cooked Honey Pepper Pork Shoulder

Succulent tender pork is the result of this delightful slow roast, with little shards of crunchy crackle on top.

What you’ll need

 Costco SunPork Shoulder Roast
 1 Tbsp. olive oil
 1 Tbsp. honey
 1 Tbsp. soy sauce
 1 red chilli
 2 garlic cloves, minced
 1 Tbsp. coriander seeds, toasted

 1 Star anise
 thumb size piece of fresh ginger

 1 lime, halved
 1 Tbsp. olive oil
 salt and pepper

 

How to make it

  1. Heat oven to 200C.
  2. Score the skin of the SunPork shoulder roast and rub with olive oil and salt.
  3. Blend all remaining ingredients, except lime, to form a paste.
  4. Turning the shoulder roast skins side down, make some incisions in the skin of the meat and massage the paste into the meat (avoid the skin).
  5. Wrap the meat tightly in baking paper then alfoil, leaving the skin exposed to crisp. Place on an oven tray.
  6. Cook in the oven for 15 mins, then reduce to 160C and slow cook for 2 1/2 - 3 hrs. 
  7. Keep an eye on the pork, and if it is drying out in the wrap, add a little water.
  8. When the pork is ready it simply shreds with two forks.
  9. Serve with a squeeze of lime juice.
