Pulled Pork Tacos

What you’ll need

  •  1 SunPork shoulder roast
  • 100g of Four Monkeys Pork rub
  • 200g jalapeno lime mayo
  • 250g of coleslaw
  • 1 cup Baby Rays Honey Chipotle BBQ Sauce
  • 2 cobs of corn, chargrilled
  • 100g of sliced jalapenos
  • 200g fresh guacamole
  • 10 corn tortillas
  • 2 limes

How to make it

1.    Place shoulder roast on baking tray and cover with four monkeys BBQ rub. Cover tray with foil and place in the oven at 160 degrees for 3 hours. Remove from oven and rest for 30 minutes.

2.    With a fork, pull the pork roast apart until it is shredded into small pieces. Mix Honey Chipotle BBQ Sauce through pulled pork.

3.    Fill each tortilla with pulled pork, a drizzle of jalapeno lime mayo, a handful of coleslaw, a spoonful of chargrilled corn, two slices of jalapenos and a dollop of guacamole. Drizzle with a squeeze of lime and enjoy.
