Pork with Pink Grapefruit and Macadamia Salad

The Asian style salad balances perfectly with grapefruit segments and marinated pork steaks. Toasted macadamias give you the crunchy bit!

What you’ll need

Marinade
 1kg Costco SunPork Country Style Pork Steaks
 1 brown onion, diced
 2 Tbsp. ginger, minced
 2 garlic cloves, minced
 1 cup palm sugar, minced
 ¼ cup soy sauce
 1 cup water
 2 star anise
 1 cinnamon stick
 2 Tbsp. fish sauce

Grapefruit salad
 2 pink grapefruits
 ½ cup macadamia nuts, toasted
 1 cup coriander
 1 cup Thai basil leaves
 1 cup mint leaves
 1 Tbsp. fish sauce
 1 Tbsp. palm sugar, minced
 1 tsp. sesame oil

How to make it

  1. Heat a saucepan over med-high heat; add the Costco SunPork Country Style Pork Steaks and cook until brown, then transfer to a plate.
  2. Add onion, ginger and garlic to the saucepan and cook for 5 mins.
  3. Add browned pork, palm sugar, soy sauce, water, star anise and cinnamon stick and bring to the boil.
  4. Cover, reduce heat to low and cook for 30 mins.
  5. Add fish sauce, bring to the boil and cook for 5 mins or until sauce thickens.
  6. Combine 1 segmented grapefruit, macadamia nuts, coriander, basil and mint in a salad bowl.
  7. In a jug, combine juice of remaining grapefruit, fish sauce, palm sugar and sesame oil and whisk until sugar dissolves.
  8. Slice the Costco SunPork Country Style Pork Steaks into bite size chunks, and arrange on top of the salad.
  9. Drizzle with the dressing and serve immediately.
