Pork San Choy Bao

What you’ll need

  • 250g lean pork mince
  • 1 Tbsp. sesame oil
  • 1 garlic clove, crushed
  • 1 cm piece of ginger, finely grated
  • 2 spring onions, finely chopped
  • ½ medium carrot, finely grated
  • ½ Tbsp. soy sauce
  • 1 Tbsp. oyster sauce
  • Juice of ½ lime, plus wedges to serve
  • 1 large handful bean sprouts
  • Sea salt and ground black pepper, to taste
  • 4-6 baby cos leaves
  • 1 small handful coriander leaves, picked

How to make it

  • Heat a wok over med - high heat and add the oil.  
  • Add the garlic and ginger and cook for 1 min. Add the carrot and cook for a further 1-2 mins until soft.
  • Add the pork mince and cook for 5-6 mins or until cooked through.
  • Add soy sauce and oyster sauce and stir to combine.
  • Add the spring onions and 2 teaspoons of lime juice and cook for 2 -3 mins.
  • Stir in the beansprouts and season with salt, pepper.
  • Spoon the pork mixture evenly into the cos lettuce leaves.
  • Enjoy!
