Pork Meatballs with ginger noodle soup

Warm up this winter with this flavoursome Asian dish!

What you’ll need

  • 100 g pork mince
  • ¼ tsp. white pepper
  • ¼ tsp. sugar
  • ¼ tsp. vegetable stock powder
  • 1 French shallot , diced
  • 1 spring onion , thinly sliced
  • 5 cm piece of ginger, minced
  • 1 Tbsp. vegetable stock  
  • 3 tsp. fish sauce
  • 2 packets of instant ramen noodles
  • 1 spring onion, thinly sliced
  • 6 sprigs of fresh coriander, chopped
  • 1 fresh red chilli, thinly sliced

How to make it

 

1.       Place spring onions and shallots in a mixing bowl. Add mince, white pepper, sugar, stock powder and combine. Roll into small balls and set aside.

2.       Fill a large saucepan with 1 litre of water and set over a medium-high heat. Add ginger, stock cube, fish sauce, salt and pepper. Bring to boil and add meatballs. Cook for 2 mins

3.       Drop in the noodles and cook for a further 2 mins.

4.       Divide the soup between bowls, scatter coriander and chilli then serve immediately.
