Pork Katsu Curry

This curry based sauce on crispy crunchy coated pork loin is a cracker for an easy mid-week meal.

What you’ll need

 8 Costco SunPork Pork Loin Steaks
 2 eggs, beaten
 3 cups panko crumbs
 2 cups plain flour

Katsu Sauce

 1 Tbsp. peanut oil
 1 onion, diced
 1 Tbsp. ginger, minced
 2 garlic cloves, minced
 1 Tbsp. curry powder
 2 Tbsp. plain flour
 2 1/2 cups chicken stock
 1/4 cup soy sauce
 2 tsp. honey
 2 tsp. rice vinegar
 1 tsp. garam masala

How to make it

  1. Pre-heat fan forced oven to 220°C.
  2. For the Katsu sauce, heat the peanut oil in a saucepan over med-high heat. Add onion, ginger and garlic and fry until tender.
  3. Add curry powder and fry for 1 min; stir in flour and cook until sandy.
  4. Whisk in stock, soy sauce and honey and simmer for 2 mins.
  5. Add the rice vinegar and garam masala then reduce heat to low and keep warm.
  6. Using a meat mallet, flatten Costco SunPork Pork Loin Steaks to 2cm thickness.
  7. Dip the Costco SunPork Pork Loin Steaks into flour, then egg, then panko crumbs and shake off excess.
  8. Heat 1-2cm oil in a frypan over med-high heat.
  9. Shallow fry the Costco SunPork Pork Loin Steaks for 2 mins each side until golden.
  10. Transfer to the oven and bake until cooked through (5-6 mins).
  11. Serve the Costco SunPork Pork Loin Steaks with steamed rice and top with Katsu sauce.
