Pork Gyros

Whether you spell it Gyros, Yeeros or Yiros, these tasty Greek style wraps are fun and delicious when made fresh at home.

What you’ll need

 2 Costco SunPork Pork Tenderloins
 4 garlic cloves, peeled
 4 oregano sprigs
 1 cup chicken stock
 2 celery sticks, sliced
 3 bay leaves
 Salt and pepper, to taste
 1 cup Greek yoghurt
 1 garlic clove, crushed
 ¼ tsp. dried oregano
 8 large pita pockets or Gyros wraps
 1 red onion, sliced
 2 tomatoes, sliced
 150g baby spinach
 1kg oven baked chips

How to make it

  1. Pre-heat fan forced oven to 180°C.
  2. In a large saucepan, combine the Costco SunPork Pork Tenderloins, garlic, oregano sprigs, stock, celery, bay leaves, salt and pepper.
  3. Bring to the boil, then cover and reduce heat to med-low, cook for 1 hr.
  4. Remove the Costco SunPork Pork Tenderloins from the sauce and discard the stock mixture; rest covered.
  5. Cook the chips according to pack instructions.
  6. Meanwhile combine the yoghurt, crushed garlic and dried oregano in a bowl.
  7. Shred the Costco SunPork Pork Tenderloins with a fork.
  8. Spread yoghurt mixture over half of each pita bread.
  9. Top with onions, tomatoes, spinach, crispy chips and shredded pork.
  10. Serve immediately.
