Pork Belly Bao Buns

Well these were an absolute staff favourite in the office when we whipped them up in our kitchen!  We made the bao buns from scratch, but if you prefer to make it easier, simply purchase ready-made bao buns and follow the pork belly cooking steps only! Bao Bun Fun! TIP: Make more than you think you'll need as they are popular!

What you’ll need

500g Costco SunPork Pork Belly Strips, cubed
 2 Tbsp. honey
 2 Tbsp. lemon juice
 ¼ cup soy sauce
 2 Tbsp. sesame oil
 1 garlic clove
 1 bunch coriander
 1 cucumber, julienned
 1 pack fried shallots
 ¼ red cabbage

Dough
 3 1/2 cups plain flour
 1 ½ tsp. caster sugar
 1 tsp. fast-action dried yeast
 ½ tsp. salt
 1/5 cup milk
 1 Tbsp. sunflower oil
 1 Tbsp. rice vinegar
 1 tsp. baking powder
 Olive oil

How to make it

  1. Combine honey, lemon juice, soy sauce, sesame oil, garlic and the Costco SunPork Pork Belly Strips in a large bowl, then cover with cling wrap and marinate for 4 hrs.
  2. Combine flour and sugar in a large bowl. Dissolve yeast and salt in 1 Tbsp. warm water, then add to the flour along with the milk, sunflower oil, rice vinegar, baking powder and 200ml of water. Mix dough, adding a little extra water if needed.
  3. Tip the dough onto a floured bench and knead for 10-15 mins, or until smooth. Place in an oiled bowl, cover with a damp cloth and leave to rise for 2 hrs, or until doubled in size.
  4. Roll the dough into a long sausage shape (3cm thick) and cut into 3cm wide pieces.
  5. Roll each piece of dough into a ball and leave to rest for 2-3 mins.
  6. Use a rolling pin to roll each ball into an oval shape (3-4mm thick). Brush each oval with oil and gently fold in half.
  7. Transfer the prepared buns to a lined baking tray, cover with a clean tea towel and leave to prove in a warm place for 1 ½ hrs or until doubled in size.
  8. Place frypan over med-high heat. Add the Costco SunPork Pork Belly pieces and marinate. Cook for 15 mins until the sauce has thickened and the Costco SunPork Pork Belly is cooked through.
  9. Heat a large steamer over med-high heat. Steam buns for 8 mins or until puffed up.
  10. Prise open each bun and fill with Costco SunPork Pork Belly, cabbage, cucumber and top with coriander and fried shallots.
