Memphis Style Dry Rub Ribs

What you’ll need

 1 pack Costco SunPork Meaty Loin/Baby Back Ribs
 2 Tbsp. butter
 2 Tbsp. honey
 2 Tbsp. brown sugar
 1 cup BBQ sauce

WAM sauce

 200ml whiskey
 1 apple juice ‘Popper’
 Maple syrup, to taste

Dry Rub

 ¼ cup sweet paprika
 4 ½ tsp. black pepper
 4 ½ tsp. dark brown sugar
 1 Tbsp. salt
 1 ½ tsp. celery salt
 1 ½ tsp. cayenne pepper
 1 ½ tsp. garlic powder
 1 ½ tsp. dry mustard
 1 ½ tsp. ground cumin

How to make it

  1. In a large bowl, combine all dry rub ingredients and apply to the front and back of the SunPork Meaty Loin Ribs.
  2. Let the SunPork Meaty Loin Ribs rest for 3 hrs before cooking.
  3. Meanwhile, combine WAM sauce ingredients and pour into a spray bottle.
  4. Place the SunPork Meaty Loin Ribs into a smoker at 110°C for 3 hrs; spraying WAM sauce over the SunPork Meaty Loin Ribs intermittently after 1 hr of smoking.
  5. After 3 hrs, wrap the SunPork Meaty Loin Ribs in foil (meat side down) with brown sugar, butter and honey.
  6. Place back into the smoker for 1 hr; basting with BBQ sauce several times throughout.
  7. Remove and let rest for 15 mins.
