Hidden Vegetable Meatloaf

Trick the kids into eating extra serves of vegetables with this easy and delicious hidden vegetable meatloaf! This recipe can easily be changed to make spaghetti and meatballs too!

What you’ll need

·         250g Costco Ground Pork

·         250g Beef Mince

·         2 carrots, roughly chopped

·         2 celery stalks, roughly chopped

·         1 cup corn kernels

·         1 cup sliced mushrooms

·         2 zucchinis, roughly chopped

·         2 onions, roughly chopped

·         1 cup tomato paste

·         1 egg

·         2 cup breadcrumbs

·         ½ cup parmesan cheese

·         2 Tbsp. Mixed herbs

·         2 Tbsp. garlic

·         Salt and pepper to season

·         6 rashers streaky bacon

·         1 bottle of premade tomato & herb pasta sauce

How to make it

1.       Line a baking tray with baking paper and preheat oven to 180 degrees.

2.       Place carrots, celery, mushrooms, corn kernels, zucchinis and onions in blender. Blend until fine and smooth.

3.       Combine vegetable mixture with mince, egg, breadcrumbs, cheese, tomato paste, salt, pepper, mixed herbs and garlic. Once combine, form into log and place on baking tray.

4.       Cover top of meatloaf with streaky bacon and place in oven for 1 hour. Pour pasta sauce around meatloaf and cook for a further 20 mins or until bacon is crispy.

5.       Serve with your favourite vegetables and enjoy!
