Greek Pork Loin Steaks with cous cous salad

What you’ll need

4 SunPork Loin Steaks

½ red capsicum

3 spring onions, sliced

20g black olives

100g cherry tomatoes, halved

1 cup cous cous

½ cucumber, sliced

2 Tbsp. Olive oil

1 tsp. oregano

2 lemons

100g natural yoghurt

2 tsp. cumin

2 tsp. paprika

1/8 tsp. ground cinnamon

How to make it

  1. Combine cinnamon, paprika, cumin, yogurt, oregano and 2 Tbsp. lemon juice in a bowl. Add loin steaks and coast in yoghurt mixture. Allow to marinate for 30 mins or overnight.
  2. Cook cous cous according to packet instructions.
  3. Once cooled, add spring onions, black olives, cherry tomatoes, cucumber and 1 Tbsp. of lemon rind to cous cous and stir to combine.
  4. Place loin steaks in a fry pan and heat over med heat. Cook for 4 mins each side or until cooked through.
  5. Serve steaks with cous cous, drizzle with lemon juice and enjoy.
