Cherry Bourbon Glazed Leg Ham

What you’ll need

 Three Aussie Farmers Leg Ham
 1 cup cherry jam
 1/3 cup bourbon
 1/2 tsp. lemon juice
 Cloves 
 Salt & pepper

 

How to make it

  1. Heat oven to 180C.
  2. Make your glaze by mixing all ingredients (except cloves) together.
  3. Remove the skin from the ham, being careful not to tear the fat.
  4. Score the fat (not the flesh) evenly in a diamond pattern, ensuring an even scoring depth as you go. 
  5. Place a clove in each intersection of your diamond scores.
  6. Glaze the ham then place in a large roasting pan with 1 cup of water.
  7. Bake until sticky and golden  1 - 1 1/2 hrs.
  8. Baste the ham with glaze while cooking.
  9. Rest for 30 mins before carving.
